It have been raining the last weekends. Cool weather for one to nap on weekends. However, it is also kinda of waste of my time catching up with sleep.

Last weekend as usual, go out walk walk back at home for nap in the afternoon. Then since I do not want to cook, called my mother-in-law to prepare our dinner.
By the time we woke up, it was already 7pm+. Ended up dinner only starts at 8pm after we reached. :P

Last night Joel helped me in making a Pandan Cake using the premix. He likes it alot and is proud to make the cake by himself - cracking the 7 eggs, pouring flour and liquids into the mixture and wisking the mixture. Maybe I should get more premix for him to work on. :)

Thinking what to have for my breakfast tomorrow morning trigger me to do a 杂果蒸蛋糕 Steam Mix Fruit Cake following the recipe provided by Violet.

I did a 1/2 recipe, but forgetful me added 1 tsp of the Sodium bicarbonate. At home I do not have Orange flavour and Mixed spice powder, so I replaced Mixed spice powder with cinamon powder instead.

Despite of the above, it turn out well and delicious (abit bitter due to the excess sodium bicarbonate), but steaming time abit long which can do away with if you are watching TV program or housework.




杂果蒸蛋糕

材料1
牛油 : 250g
黄糖 : 250g

材料2
全蛋 : 250g (4粒大)

材料3
Vanilla oil : ½ tsp
Orange flavour : 1tbsp

材料4 (过筛)
普通面粉 : 300g
梳打粉 : 1tsp
混合香料 : 1tsp

材料5
Mixed fruits : 200g

方法
1) 用中速将材料1打均
2) 将蛋逐粒加入打均
3) 加入材料3拌均
4) 改低速把材料4加入拌均
5) 加入材料5拌均
6) 倒入已涂油及铺上纸的22cm的圆形蒸盆
7) 在蒸盆上盖上锡纸
8) 以中火蒸30分钟改小火蒸 60 – 80 分钟

Steam Mix Fruit Cake
Ingredient A:
Butter : 250g
Brown sugar : 250g

Ingredient B:
Egg : 250g (4 big eggs)

Ingredient C:
Vanilla oil : ½ tsp
Orange flavour : 1tbsp

Ingredient D: (sift)
Plain flour : 300g
Sodium bicarbonate : 1tsp
Mixed spice powder : 1tsp

Ingredient E:
Mixed fruits : 200g

Method:
1) Mix Ingredient A well with medium speed
2) Add one egg at a time, mix well
3) Add in Ingredient C, mix well
4) Reduce to low speed, stir in Ingredient D
5) Add in Ingredient E, mix well
6) Pour into 22cm greased, paper-lined tin
7) Cover the tin with alumium foil
8) Steam 30 min at medium heat, reduce to low heat and steam for another 60 – 80 mins

Do you know somthing your fren here woke up at 0630am to make breakfast! ON right?
I made muffins this morning..so you can imagine, my family woke up with the smell of muffins filled house. So nice and tempting right?
Anyway, it is a premix :P So just add water, stirred the mixture, pour into the cups and off into the oven. Simple right?

My son vomited yesterady moring :(.
Hence I stayed at home to takecare of him yesterday as mum was going out.
Luckily he was recovered in the late afternoon. Phew!
However, me was dead tired with lotsa of bedsheets to wash and dry... as he vomitted twice and urined on the matteress! Urgh! Busy doing the cleaning and cooking takes up my whole day.

Managed to bake a butter cake for this morning breakfast though using 1/2 the recipe as i scared cannot finish:



Butter Cake Recipe:
Ingredients

250 gm butter
200 gm caster sugar
6 large eggs
1 tsp vanilla essence
300 gm self-raising flour (sifted)
½ to 3/4 cup of evaporated milk

Method

1. Preheat the oven to 160°C.
2. Beat the butter with the caster sugar until white and fluffy. Add in eggs one at a time and mix well. Then add is vanilla essence and evaporated milk and mix well.
3. Lastly fold in sifted flour into the butter mixture and mix well. Pour into a greased and lined cake tray and bake for about an hour.

When I found the banana bread recipe on the net, I could not bring myself to believe that it was so easy even a few mummies had try and proven it. Afterall these mummies of the moms4moms forum are experts in baking. Since I had brought a bunch of banana, I decide to give it a try afterwork at home.

On my way home, i am still thinking of "All purpose flour = Plain flour"??
Then with the 2nd recipe, it state Self-raise flour, so I choose this flour instead.
So before dinner within 15 mins, I measured and pour all stuffs into the mixing bowl and stir with a fork and have the bread into the oven.

Tasked my mum to watch over the banana bread while I bring my son out after 20 mins of baking. The end result is this:



Eating it the texture is between bread and cake. Wonder why cake shop called it Banana Cake while online most people called it Banana Bread? Anyway, as long as can go into the stomach safe and sound do not care whether what should it be known as right?

Sorry my family loves it so much that we had only this much left for breakfast. :P
Mum is so pleased with it that she wants me to bake a 2nd one, translate the recipe into chinese and saved the remaining banana for her to try out tomorrow. Guess my family will have more banana bread cake to eat.

The recipe that I use:
One Bowl Banana Bread

(yield: 12 servings)
Ingredients:
2 cups all-purpose flour
1 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup mashed ripe banana (about 2 medium)
1/3 cup milk
1/4 cup vegetable oil
1 egg
1/2 cup chopped nuts (optional)

Preheat oven to 350F.
Coat bottom of Loaf Pan with butter.
Combine flour, sugar, baking powder and salt in a big bowl.
Add remaining ingredients; stir till all ingredients are moistened.
Pour batter into Loaf Pan.
Bake @ 60 mins or until cake tester inserted in centre comes out clean.
Remove from oven to cooling rack; cool for 10 min.
Loosen sides of loaf from pan; remove from pan.
Cool completely.
