At work, the dynamic and enthusiastic Tiger may struggle under the yoke of constraints placed on him by the slow moving Ox. Any rash financial decisions made today could cost you money. At home, family differences may end in a quarrel with both sides becoming inflexible. Try to stay calm.

Luckily today no need to report for work hence not an issue. Wonder who belongs to the OX group..I must avoid! Ok, so today dun think of buying anything so won't spend monkey and i won't regret later. Also to avoid quarrel i think i better go and nap most of the time. :P

I am so "mountain tortoise", this place exist since the year 1979 and last night is my 1st time there! Quite a quiet place and the food there smell very nice. Maybe I too hungry last night. Anyway, we planned to go there again next time to dine.

Finally I have chance to watch a Gei Tai show.
It happened at the temple I went last night. Most time their talking is in hokkien but my husband do not understand at all.
They are quite IN, even sang the song of "一人一半 " think one of the song in the "881" chinese show.

I think I am going to be sick soon.
On Mon having a bad sore throat and yesterday sore throat still despite of so much water IN TAKE. And today me having block nose in the morning then now having a running nose..sigh...
Don't know if i will be well for saturday baking class or not?
Also I have been thinking of cooking the crab bee hoon soup for a long long time, yet to cook it. Hope can buy at least 1 crab this week to cook up the dish!

Made this 2 weeks back only now have time to update. This is suppose to be the "九层糕 Kuih Lapis"
But while cooking my mum asked me to quickly poured finish and get done with it, do not waste time...ended up you see a 6 layer version. :P
Next time I shall not listen to her and take my own sweet time and maybe have more colour too.



Recipe is here..again from Violet blog.
九层糕
材料1
糖 : 210g
水 : 150g
香兰叶 : 6 片

材料2
粘米粉 : 50g
薯 粉 : 180g
椰浆 : 480g
盐 : ½ tsp
Vanilla oil : ¼ tsp

方法
1) 把材料2放进深盆内, 搅拌均匀
2) 把材料1煮开, 倒进材料2里, 搅均, 过沥
3) 把粉浆分成2份, 1份加入红色, 1份保留白色
4) 把16 - 18 cm 蒸盘蒸热, 倒入白色粉浆 100g, 蒸5分钟
5) 倒入红色粉浆 100g , 蒸5分钟
6) 重复同样的方法至最后1层, 蒸10分钟
7) 取出待冷便可享用


Kuih Lapis
Ingredients A:
210g sugar
150g water
6 pcs pandan leaves

Ingredients B:
50g rice flour
180g tapioca flour
480g coconut milk
½ tsp salt
¼ tsp Vanilla oil

Methon:
1) Put Ingredients B into a mixing bowl and mix well
2) Mix Ingredients A and bring to boil. Pour into Ingredients B
and mix well, strain.
3) Divide batter into 2 equal parts. Add red coloring in 1 part.
Leave 1 part white
4) Heat up a 16 - 18 cm steaming tray, pour 100g of white
mixture into the steaming tray and steam for 5 mins
5) pour 100g of red mixture on top of the white layer and
steam for 5 mins
6) Repeat until the last layer, steam for 10 mins
7) Remove, leave to cool completely before cutting into pieces

Note: I divide the batter into 3 portion, so made 1 green, 1 red, 1 natural batter colour - white. If wish to have more colours then need to divide into more portion.

Thinking what to have for my breakfast tomorrow morning trigger me to do a 杂果蒸蛋糕 Steam Mix Fruit Cake following the recipe provided by Violet.

I did a 1/2 recipe, but forgetful me added 1 tsp of the Sodium bicarbonate. At home I do not have Orange flavour and Mixed spice powder, so I replaced Mixed spice powder with cinamon powder instead.

Despite of the above, it turn out well and delicious (abit bitter due to the excess sodium bicarbonate), but steaming time abit long which can do away with if you are watching TV program or housework.




杂果蒸蛋糕

材料1
牛油 : 250g
黄糖 : 250g

材料2
全蛋 : 250g (4粒大)

材料3
Vanilla oil : ½ tsp
Orange flavour : 1tbsp

材料4 (过筛)
普通面粉 : 300g
梳打粉 : 1tsp
混合香料 : 1tsp

材料5
Mixed fruits : 200g

方法
1) 用中速将材料1打均
2) 将蛋逐粒加入打均
3) 加入材料3拌均
4) 改低速把材料4加入拌均
5) 加入材料5拌均
6) 倒入已涂油及铺上纸的22cm的圆形蒸盆
7) 在蒸盆上盖上锡纸
8) 以中火蒸30分钟改小火蒸 60 – 80 分钟

Steam Mix Fruit Cake
Ingredient A:
Butter : 250g
Brown sugar : 250g

Ingredient B:
Egg : 250g (4 big eggs)

Ingredient C:
Vanilla oil : ½ tsp
Orange flavour : 1tbsp

Ingredient D: (sift)
Plain flour : 300g
Sodium bicarbonate : 1tsp
Mixed spice powder : 1tsp

Ingredient E:
Mixed fruits : 200g

Method:
1) Mix Ingredient A well with medium speed
2) Add one egg at a time, mix well
3) Add in Ingredient C, mix well
4) Reduce to low speed, stir in Ingredient D
5) Add in Ingredient E, mix well
6) Pour into 22cm greased, paper-lined tin
7) Cover the tin with alumium foil
8) Steam 30 min at medium heat, reduce to low heat and steam for another 60 – 80 mins

It has been a long long time since I made the Walnut Mooncakes.
Most time after course, it was my mum who would be making for the family after I taught her. For the past few years, I usually helped my mum to mix the ingredients to form a dough since I would be taking care of my son while my mum is baking. This year finally I found sometime to make them from dough to shaping and baking! But still my mum helped me to shape most of them while I was busy with baking the cookies. What a busy night... but the result is rewarding. I had made 52 pieces. Very happy and 09092007 is a good day!

This is my WALNUT MOONCAKES..one of my favourite!


How do they looks?
I find them rather presentable with the gift pack! :)
I am sharing some of them with my uncle and an auntie, didn't bake enough for the whole family clan. Oops! Next year maybe...hahah..

Tonight is a busy day!
I baked the oatmeal cookies after feedback from Joyce that it is good a worth value to stock up. So since I am switching ON my oven to make the Walnut Mooncakes might as well bake the cookies too. Also my mum is helping me therefore can do faster. :P

Think this is the first time I bring Joel there though I have been there quite a few times since it opened. Farm mart changed alot and it does not seems to be that attractive after all these years. But glad to found a good place to lunch as recommended by a colleague.

Have you give a thought of what "Water Cystallization Vs Words" is all about? How did it happen?



I was introduced to this japanese guy named Masaru Emoto and his research on the above by my trainer today too. Guess I have learnt alot from this course.

Nice words (like beautiful, love, dream) use would produce nice looking water cystals just like the one above whereas words like Ugly, fool, stupid...produce no-so nice water cystals just like the words used.

Most people don't realize that the way they are breathing is not the healthiest way. Deep breathing down into your diaphragm is a much healthier way to breathe. Deep breathing has been shown on many occasions to help the body to relax and can increase liveliness and energy.
Some people, when attempting deep breathing, actually do the opposite - the diaphragm is sucked in and the shoulders go up. That is shallow breathing and not the most effective way to get the optimum amount of oxygen.

Here are some simple instructions to start you on your journey to learning deep breathing:

Lie down comfortable or sit in a chair, making sure your feet are flat on the floor.

Shut your eyes, to minimize distraction. If you are not in a location where closing your eyes is an option, focus on one particular spot.

Focus completely on your deep breathing - Inhale at a slow pace through your nose.

Imagine that your diaphragm is sinking while your lungs are filling with air.

Relax the lower portion of your diaphragm while you continue your deep breathing through your nose.

Once you feel you have reached your air capacity, release the air slowly out of your mouth. You can now imagine that your diaphragm is deflating.

Repeat this whole process several times.

Never stop quickly! Always give your body some time to return to normal breathing.

Once you learn the art of deep breathing, you may find your health improving and your stress levels decreasing!

Most therapeutic breathing techniques place an emphasis on concentrating on steady, rhythmic breathing. Some are used as an aid to more effective meditation or as part of a yoga routine.

And special breathing techniques have helped millions of women to give birth more effortlessly. Controlled breathing and deliberately concentrating on breathing during the act of childbirth can lead to a more relaxed state and can help to alleviate the pain of giving birth.

If you are giving birth, taking a deep breath - usually in through the nose and out through the mouth - before and after every contraction can help you concentrate more. This technique also allows your baby to receive more oxygen.

Correct breathing techniques are beneficial to health as well. If you breathe deeply and slowly, you take in oxygen which helps to remove waste products from the body and ultimately helps to increase energy.

On the other hand, erratic or fast breathing can lead to a rapid heartbeat and can constrict the flow of blood. It may be something we take for granted every day - but correct breathing techniques can certainly make a difference in our lives.

Patience is the ability to endure waiting, delay, or provocation without becoming annoyed or upset, or to persevere calmly when faced with difficulties.
Impatience is an opposite of patience.

How often we check our watch?
How often we are told of deadline?
How often we are irriated by the slow cars on the road?
How often do we rush others?
How often do we stopby and say hi and show concern for our friends?

I was on course today and indeed I learnt something NEW or rather re-discover who am I?!? Most of us, I believe are at rush for this and that in life. Always racing against time even though as we have only 24 hours a day and yet we have so many things/tasks at hands to accomplish. Resulted in many times, I was rather impatience with people around me and I do not spend enough time with them.

I was taught to slow down in life, there is nothing worth rushing for. I MUST LET GO of things at times in life.

I realised that I have not been showing alot of patience to my dear son as he grow older and also patience for my husband to take his sweet time to accomplish his task. Many times my son would be the one testing my patience and I will be like many other occassion told him to "SHUT UP and DO IT". Luckily my husband who is more patience than me would take over to talk to him.

Sound familar right like what our education had all along taught us to. So you can see who "successful" is our educational system ," Don't ask question, do quietly, no talking in class, raise your hand up before you talk....etc"

I hope from today onwards I would be able to show more patience to my son and those who are around me. Also to show a little more compassionate to the ones I love and cares for.
